Here are some of Carol’s quick and easy raw food recipes that you can make at home – and they take less than 5 minutes to prepare!
Cucumber Salad: Thinly slice 1 large organic English cucumber. Dice half an onion and 1 avocado and combine with the cucumber. Mix 3 heaping tablespoons kefir with Udo’s Choice cold-pressed extra-virgin olive oil and Celtic sea salt. Toss with the cucumber mixture and serve.
Lentil Salad: Dice 1 white onion, 1 tomato, and 1 organic English cucumber, and combine them with 1 cup raw, sprouted lentils (sprouts help the body absorb nutrients better). In a separate bowl, whisk 2 tablespoons Udo’s Choice cold-pressed extra-virgin olive oil, 2 tablespoons raw apple cider vinegar, sea salt to taste, and juice from ¼ lemon. Add to the lentil mixture.
