All You Could Ask For, the debut novel by Mike Greenberg, cohost of ESPN’s Mike and Mike in the Morning, has been selected as Sutter Home Winery’s book club pick for October!
All You Could Ask For is a tender and insightful story of friendship and love, heartbreak and renewal, played out in the lives of three unforgettable women. Mike’s recipe is a delicious Spaghetti al Tonno from one of his favorite restaurants, Pane e Bene in Westport, CT. This dish is flavorful and fresh, using olives, tomatoes, and spices. Complete your meal with a glass of Sutter Home Cabernet Sauvignon. We know what we’ll be making for dinner this weekend!
Spaghetti al Tonno
2 cloves garlic
6 pitted gaeta olives
¼ cup/60 ml extra virgin olive oil
7 oz/150 g tuna, packed in oil, crumbled
Generous 1/3 cup/100 ml dry white wine
1 lb/400 g cherry tomatoes halved
Salt and freshly ground white pepper to taste
12 oz/350 g dried spaghetti
1 tablespoon finely chopped parsley
Saute the garlic in oil in a large frying pan over medium heat for 2 minutes until pale gold
Add the tuna and sauté briefly
Pour in the wine and cook until evaporated
Add the tomatoes and olives with a wooden spoon against the skillet
Cook the pasta in a large pot of salted water until al dente
Drain & transfer to serving bowls
Sprinkle with parsley and serve immediately
