Recipe: Emeril Lagasse’s Fastest BBQ Brisket

Growing up, my mom would pull her pressure cooker out from the basement several times a year. This was good news, because it meant she was making one of two things: stuffed artichokes, or Yankee Pot Roast. We also had a slow cooker, but it was infrequently used–I don’t think my parents had the recipes or ideas to take advantage of the appliance, and it mostly hibernated in a closet in the basement. The small kitchen electrical appliance that got the most use was my dad’s griddle. He’d use it nearly every weekend for pancakes. When I first lived on my own, it took me years to master a perfectly cooked pancake made in a frying pan over an open flame (that’s how well-trained I was on the electric griddle).

If you’ve recently bought a small appliance for your kitchen, no doubt your intention is to use it the way my family  used that pancake griddle–to the max. No one wants a new deep fryer or multi cooker to languish in the basement because of lack of recipes or ideas.
