The Ultimate Volumetrics Birthday Brunch

Ten years ago I used The Volumetrics Weight-Control Plan by Dr. Barbara Rolls to get to my wedding-day goal weight. It was the most effective diet I’ve ever been on—and since then I’ve tried things like cutting out carbs, cutting out dairy, drinking a gallons of water a day, memberships to name-brand diet organizations, diet competitions, juice cleanses, you name it! There’s always that inevitable creep back of some or all of the pounds shed. How demoralizing, right? So when editor Cassie Jones acquired Dr. Roll’s updated and expanded The Ultimate Volumetrics Diet, I knew it was a sign: it was time for me to go back to the Volumetrics way of eating. Because while initially Volumetrics can be used as a way to lose weight, the genius of Volumetrics reveals itself when you stick to the eating plan long term.

Dr. Rolls’ plan is based on the simple idea that food volume (when paired with deliciousness, of course!) is what makes us feel satisfied. She studied thousands of foods to analyze which give us the least calories for the most volume, and built her eating plan around that. It was my birthday about two weeks ago. Last year, I baked a cake from Alice’s Tea Cup. To celebrate this year, I was having brunch with a friend at my apartment. Having just recommitted toVolumetrics eating , I decided to make the Light as a Feather Pancakes with Berry Sauce from The Ultimate Volumetrics Diet (there are more than 100 recipes in the new book). I was fascinated: how on earth would Dr. Rolls make these pancakes less calorie-dense, when a typical pancake recipe includes flour, eggs, and milk—all of which are calorie-dense?

The answer is 1% fat cottage cheese. It takes the ½ cup white whole-wheat flour the recipe calls for and stretches it out into enough pancakes for four people. (Most pancake recipes require more than a cup of flour). And the berry sauce is a smart—and sweet—exchange for maple syrup.

So I stood in my kitchen and mixed up these pancakes as I caught up with my friend. They were easy to make, and I could give most of my attention to our chat as I measured, mixed and flipped. I was a little nervous; I hoped these pancakes satisfy my friend too, who wasn’t dieting.

Before I knew it we were seated around the table, clinking coffee cups and digging into these pancakes. Not only were they both fluffy and yummy, neither one of us felt as if we were eating “light” or “diet” pancakes. We cleaned our plates, guilt-free. Dr. Rolls helped me have just the right kind of birthday brunch.

By the way, I’ve lost seven pounds since I started applying the Volumetrics principles to my daily eating. How’s that for a birthday present?
