    Just clean the fish and add lime, lime will help kill bacteria you don’t want, and it ttseas good by the way, be careful because lime and other natural sour fruits can act as a natural laxative, especially when mixed with peppers.I have not used salmon and don’t think I ever would. It is just to fishy for larp in my opinion, but you may like it. If I had to use it, I would cook the salmon and add a lot of lime, herbs, and roasted rice powder. Safest bet is to stick with chicken, you may scare off your guests with raw fish in a foreign dish other than sushi introduce different dishes little by little so its not so outrageous for people that aren’t used to different ethnic food.If you are in Luang Prabang, and you are eating raw fish, try to avoid getting anything from the side of the road where they sell food. Most likely it has been sitting there all day. I would tell them you want fresh catch and pick out a fish. Most of the times the food sits there until people come around which is not too often. Try going to a busier place or a place by the water so it is more likely to be fresh. Remember, the people there are used to the food and can stomach it way more, they are used to bacteria so even if it is unsanitary, they can handle it because their stomach is used to it and immune and have strong stomachs it is not the same case with foreigners.
