Lulu Powers to the Rescue!

On Tuesday afternoon, I received a call from my husband. He scheduled a last minute dinner with his clients who were in town from the UK. Fun! They would be at our apartment at 7:30, that night. Gulp!

My husband is very helpful around the kitchen as my sous chef, so I knew I wouldn’t be going it alone that night. And he even has a few specialty dishes that he makes all on his own. Unfortunately, I didn’t think his clients would be that impressed by his signature egg fry-up. As my mind raced, I determined that I would have to take charge and plan a meal with ingredients I could find in my pantry (I didn’t have time to wait in the long line at Trader Joe’s), with a quick turnaround (the clock was ticking!), with easy enough to follow instructions so my husband could help, and with impressive (even fancy) results.

Thankfully, I work at a place where it is easy to find some food inspiration. Enter the lady I would be channeling that evening, Lulu Powers. The subtitle of her cookbook, Lulu Powers Food to Flowers, encapsulated my vision for that night’s meal perfectly: Simple, Stylish Food for Easy Entertaining. With Lulu as my guide, I could pull off an elegant meal. Her citrus-glazed salmon, my choice for the main course, contains ingredients that I already had: limes, lemon, maple syrup, soy sauce, garlic. All I needed to do was stop by my local fishmonger to pick up the salmon on the way home.

As my husband grated the lime zest and squeezed the lemons, I measured and poured the other ingredients of the marinade over the salmon. By the time our guests knocked on our door, the fish was chilling in the fridge, allowing us to enjoy cheese, crackers, and wine with our company. When we were minutes away from dinnertime, I popped the salmon under the broiler. Voilà, dinner was served.

The guests loved it, my husband and I looked like accomplished chefs, and I discovered a fabulously simple and delicious new recipe and an entertaining inspiration.
