Cookie Week: On-the-Fly Chocolate Chip Cookies

At this point in my life, I should know better than to expect things to go according to plan. Originally, I’d been planning on baking Michel Richard’s Chocolate Chip Macadamia Cookies, from his new cookbook Sweet Magic. At my small local grocery store, I was a woman on a mission. I even managed to find pastry flour, only to haul everything home and realize the instructions make liberal use of a standing mixer, which I do not own. There goes that plan! (Can’t wait to figure out what to do with 16 ounces of macadamia nuts.)

I quickly plowed through my cookbooks and realized I could make Jean Anderson’s recipe for Chocolate Chip Cookies using the one fancy appliance I do have: a food processor. That’s right, in her cookbook Process This! she gives us a one-bowl method for this classic cookie. Anderson’s recipes have never once let me down, so I had no hesitation about giving this one a try. Also, the fact that it included a cup of chopped pecans didn’t hurt, either.

Now, about those pecans. She suggests freezing them so they chop more cleanly in the processor. I didn’t have the time to wait for mine to freeze, so they were merely chilled—shall we say?—when I tossed them in. Jean’s tip is one to follow, because I ended up with something more like pecan dust. When I shared the cookies at a meeting, I was asked if they were oatmeal cookies—understandable, since the over-chopped pecans gave the baked cookies a similar texture. Once again, not part of the original plan.

Another interesting piece to the recipe is that it included both unsalted butter and vegetable shortening—the stick kind. I’ve always just scooped out shortening from a big ol’ pot of Crisco, so I had to wing it to “cut” the 3 tablespoons required into “little pats.” The result, though, was cookies that were buttery and crisp, though still nice and plump (they didn’t flatten out too much in the oven).

What did go according to plan? Well, later that night I enjoyed some cookies with mulled wine as my best friend and I sat and admired the Christmas tree we’d just decorated in my foyer. And I got a lot of smiles when I walked around passing them out to my colleagues yesterday and today in the office. Mission accomplished, I’d say.
